Red Pepper Jelly


With the end of summer comes canning season! Last year I didn't get to do much canning (for a good reason!) so it was nice to be able to return to canning again this year. So far we have canned peaches, salsa, spaghetti sauce, jam, and my most recent addition—red pepper jelly! I've wanted to try making red pepper jelly for several years now, so I finally did it.


I looked up a few different recipes and modified them a bit. I ended up using three cups of pepper purée, which was basically just four red bell peppers chopped up in my food processor, along with two jalapeños. Then I also added a cup of apple cider vinegar, six cups of sugar, and two packets of pectin. It turned out to be just as easy as making a batch of jam! I guess, since I didn't strain the bits of pepper out of it, that technically makes it red pepper jam, but you can hardly tell the bits are in there.


My recipe ended up making six small jars as well as some extra that went into a container in the fridge. I am very happy with how it turned out! My only complaint is that it could be a bit spicier. Next time I'll add another jalapeño!


Look at that beautiful colour! My favourite way to eat red pepper jelly is on crackers with goat cheese. So delicious (and pretty)!

Fig Jam


We were recently given a box of figs.  Cool, I thought, this gives me a chance to try some new recipes.  But then we googled the best way to store figs and in the process discovered that ripe figs don't last very long.  Like a day.  Not only that, we had plans for the next day and I wouldn't be able to try making anything until the following day.  That meant I would basically have one day to deal with a whole box of figs!  Back BC (before child) that would not have daunted me - I would regularly undertake several projects in a day.  But now I am finding that beyond the essentials (baby care, meals, laundry, etc) I can only manage one extra thing a day.  That meant that I had to use all of the figs in one recipe!  Jam seemed like a good option.

I found several recipes online and combined different aspects of them to make my own.  I'm very pleased with how it turned out!


Fig Jam

8 cups chopped figs (that's how much I had)
2/3 cup honey (I started with a half cup, tasted it, and added a bit more)
1/4 tsp cinnamon
1 tbsp minced ginger (I love fresh ginger!)
1/2 cup water (I might omit this in the future, or try adding less)
1/4 cup lemon juice
1 package pectin


Cut the ends off the figs and roughly chop.  Next time I would probably cut the pieces a bit smaller.  They didn't break down quite as much as I thought they would in the cooking process. 


Add all the ingredients to a large pot, stir and bring to a boil.  Boil for about 15 minutes or however long you want to, stirring frequently.  Remove from heat, and follow whatever canning process you prefer.  The amount of figs that I had ended up only making two and a half jars.


While figs aren't my favourite fruit ever, I really like this jam!  It's not too sweet and has a bit of a bite.  I'd definitely make it again, if someone else ever happens to give me a box of figs!

Grapefruit Marmalade


We recently acquired a significant number of grapefruit; however, no one in our household particularly cares for grapefruit.  So I did what I usually do when there is something in my kitchen that I don't know what to do with - I googled new recipes.  In my research I came across the idea of making grapefruit marmalade.  I like marmalade, primarily because when I was a child I was determined to like it, probably because it was "British", and I kept forcing myself to eat it until I actually started liking it.  So I figured that marmalade would be a good thing to try making.  And besides, I needed something that used a significant number of grapefruit.  Here is the recipe that I found: Texas Ruby Red Grapefruit Marmalade

I didn't quite think through the fact that canning becomes a whole new experience when there is a 5-week-old in the house.

So for anyone else out there who is crazy like me, here it is:

How to make grapefruit marmalade (while caring for a baby).


1. Cut 5 grapefruit in half, cover with water in a large pot and boil for two hours.


2. Drain and cool.

3. Try to calm the baby, who is fussing in his bouncy chair.  Apparently watching you work in the kitchen is not entertaining him.


4. Wash and sterilize your jars.

5. The baby is still fussing, so move him to his nap corner, hoping he'll fall asleep.  He does fall asleep - holding your hand.  He's so cute that you feel bad to move your hand, so you sit there for a while with him.


6. You finally get up the motivation to remove your hand and go back to the kitchen.

7. Just as you get going in the kitchen again, the baby wakes up and starts crying.  You go back to check on him and realize he needs a diaper change.

8. You change the baby's diaper, and while you're doing so you realize the load of laundry you had in the wash has finished.

9. You put the baby back in his nap corner and go to deal with the laundry.  While doing so, you realize you still have a basket of laundry that is dry but hasn't been folded yet.  You decide that it can wait.

10. You just get back into the kitchen and the baby starts crying again.  You look at the time and realize that he's probably hungry.

11. That reminds you how hungry you are, so you scour the kitchen for something that would be convenient to eat while breastfeeding.  Meanwhile, the baby continues crying and shows no sign of getting any happier, so you give up trying to think of something healthy and grab a bag of corn chips.

12. You feed baby while trying not to drop corn chip crumbs on his head.

13. The baby is once again happy to sit in his chair, and you try to decide whether folding the laundry or continuing with the marmalade is more important.  Marmalade wins.

14. Cut the grapefruit into chunks, and remove the seeds.


15. Baby is letting you know that once again all is not well with the world, so you check on him and realize that he needs another diaper change.

16. Change the baby's diaper.

17. With baby settled into his chair once again, put the grapefruit, peels and all, into a food processor, and blend until finely chopped.


18. Notice that the daffodil plant on the table has a double-headed flower.  Take pictures of it.


19. Put the grapefruit into a pot, along with lemon juice, sugar, and honey. 


20. Bring to a boil, and taste.  Realize it is still ridiculously bitter, so add more honey.  And more honey.  An embarrassing amount of honey.  Realize that marmalade from the store must have a ridiculous amount of sugar in it.

21. Your husband gets home and you look at the clock and notice that it is already the time that you had planned to leave for supper.  Decide that the marmalade has probably boiled for long enough.

22. Pour into jars and finish the canning process.  Aren't they pretty!


23. Go out for dinner, leaving the kitchen a complete mess!

Bits and Pieces of Life

The days seem to go by so quickly... often without a chance to be still and reflect on what God has been doing.  But at the same time, there is so much to be thankful for!  The sunshine outside, a comfortable apartment that is becoming more like home every day, a loving husband, a little one on the way, plenty to eat, friends to spend time with... when I take the time to think about it, my cup is really full to overflowing!

Here is a peek at some of what I've been up to over the past week:

Last Saturday, I decided I wanted to can salsa.  Not the smartest decision perhaps, since what I really needed was a day to rest, but I'm glad that it's done, since there's still more canning that I want to do this fall.

I love buying fresh produce.  It's not quite the same as picking it from a garden, but there is still something that feels wholesome about it.



I made a full batch (with 20lb of tomatoes), which was entertaining, since I don't have a large enough pot or roasting pan to cook it all in.  All that was needed was a bit of creativity!


The end result - 11 jars of salsa, ready for eating!


I think my baby bump looks so cute with an apron on!


It's been great having visitors from Ontario!  Here Jesse is making chocolate donut holes (aka "timbits") with them.  PS. I love the new kitchen!  It's so nice to have more elbow room for working together with others in the kitchen.

Our most recent acquisition has been a giant bean bag chair.  It is so comfortable, and can seat multiple people.  Looking forward to our first movie night!
